SteveO Posted November 14, 2016 Share Posted November 14, 2016 One of the meals we do occasionally at home and which I shall be trying on the boat next season is called the cheat's roast. Line a roasting tray or similar shallow container with foil to reduce washing up, chop up some spuds into roughly 1 inch chunks, add any root veg you have to hand (celeriac, parsnips, carrots and swede all give good results) drizzle with oil and mix to ensure that the spuds and veg are coated, then add some chicken pieces (legs and thighs with skin on and bone in are good), season and then chuck in the oven at gas mk 5 -6 for about an hour, turning the bits over half way through cooking. If you want to be fancy, you can add bits of bacon, slices of lemon and some mixed herbs before cooking. Serve with green veg and some gravy made from Bisto chicken granules. Get a nice loin of pork (minus crackling), cover in foil with some water, put sliced garlic gloves into the skin and cook for a minimum of 3 hours removing foil about an hour before serving. Pre made stuffing balls alongside, also pre made apple sauce at serving. New potatoes and vegetables cooked in steamer with ready made gravy inhanced with meat juices. addicted Posted January 11, 2017 Share Posted January 11, 2017 Lamb Chop bake In a shallow oven proof dish place thinly sliced onion, arrange tinned sliced carrots over the top with any other vegetables you fancy. Tinned butter beans works well also tinned chickpeas or sliced fresh courgette, butternut squash etc. thinly sliced,. Pour over tinned tomato soup so that veg is just covered, lay lamb chops on top of the whole lot season well and sprinkle liberally with dried mint, Bake in a hot oven until the chops are brown and crispy = about 45-50 minutes. serve with jacket potatoes baked at the same time. addicted Posted January 29, 2017 Share Posted January 29, 2017 BOLOGNESE BURGERS Finely chop and gently fry in a little oil or butter an onion until just softened. Put in a bowl together with some beef mince season well add a crumbled oxo cube if liked, mix together, form round palm sized patties with a cube of mature cheddar cheese in the centre making sure the cheese is properly sealed, place patties in an oven proof dish. Lay a generous slice of cheese over the top of each one, pour over the whole lot a tin/jar bolognese sauce. Bake in hot oven for about 40 minutes. ranworthbreeze Posted January 29, 2017 Share Posted January 29, 2017 Tonight it is gammon slices for me and Mike, Tan is trying to loose a few pounds so will be having a chicken breast cooked in water first then finished off in a frying pan with a sprinkled chicken oxo cub over the breast cut into slices. No Yorkshire pudding for Tan but more for Mike & myself. Already prepped vegetables, in the pans, pudding mix in the fridge now the time to put in the roasts and tomatoes in the oven. In an oven proof dish, layer sliced corned beef, sliced tinned potatoes, softened sliced onions, baked beans, grated cheese.Bake in a hot oven until cheese is golden and melted, - about 45 minutes You can use fresh potaoes but they need to be boiled until soft first.
