addicted Posted July 11, 2017 Share Posted July 11, 2017 You will need:- Large red peppers 1 for every 2 portions 1 smallpacket lemon/coriander cous cous Mozarella cheese Olive oil Mix the couscous according to instructions on packet leave to one side Slice the peppers in half lengthways De seed being careful to leave the flesh and skin in tact Fill 3/4 full with cous cous Press thick slice of mozerella on top of cous cous Place in oven proof dish, sprinkle with olive oil, Roast in hot oven for approx' 45 minutes until peppers are tender and cheese golden These are good on their own as a supper/ lunch or as an accompaniment to fish or meat Carole 4 Quote Link to comment Share on other sites More sharing options...
