Some Sort Of Mediterranean Salad.

Well, Summer is on it's way so I decided I will have a nice salad this evening. It is something I knock up occasionally to provide a delicious dressing for my salads and I am sure somebody will come up with a name for it, I think it is Greek or something.  I am not on the boat but thought I will share this with you.

Chop up equal quantities of tomato and cucumber and tomato and put in a bowl. I used just one tomato for this instance.

Add a tablespoon full of olives (black or green) and a teaspoon full of capers and a tablespoon full of finely chopped onions (optional).

Add a squirt of extra virgin olive oil and white wine vinegar (2 of oil to 1 of vinegar).

Season with sea salt and black pepper and a good pinch of oregano.

Leave in a cool place to marinate for an hour or two.

Simple, quick and easy to do on the boat and a delicious addition to any salad dish.

If you add feta cheese then it's Greek salad.

There is no feta in the fridge to I will take your tip and shove some chopped up cheddar in it.

I am having it with some lettuce and the lovely contents of a tin of Nixe herrings in a mustard and egg sauce from Lidl. I know it is not real cooking but its the sort of thing I do on the boat to get some good food without messing around preparing it.

Any spare liquid from the salad will be mopped up with some lovely super seed bread at the end of the meal. I never buy white bread anyway but that super seed stuff is great even toasted unlike wholemeal bread that goes a bit funny when being toasted.

Unfortunately the supermarket tomatoes I bought were a bit disappointing and I am looking forwards to my first crop of Ailsa Craig tomatoes from my greenhouse. Now there is flavour for you and it knocks the spots off anything I have found on the general market.

I think those Herring Fillets, in the various cream sauces, from Lidl make a very nice salad. Or a Lovely Summer Lunch.

These are the ones that I buy:- Tomorrows salad.

I have not seen them yet in my local Lidl but I would certainly buy them if I see them.

To my mind, this sort of food is excellent for the boat's food supplies, being nutritious, delicious and not needing refrigeration.
