I am pretty sure evaluative is what Bruce refers to as Matrix which could also be called honeycomb, segment metering, or esp just to confuse things further.
Evaluative Metering is your cameras standard metering mode which is a 'standard setting'. It is will handle most subjects including those that are back lit. The camera will assess the subject's position in the viewfinder; record the brightness of the general scene, front and rear lighting conditions and also the orientation of the camera (horizontal or vertical). It will then set the correct exposure based on all of this information.
