At the beginning when they are raising the sail, we can see clearly the way the halyard is fed onto just one side of the winch barrel until the final part of the hoisting, when it is fed onto the other side. This is a simple means of "dropping down a gear" to give more leverage for the final "peaking up" of the sail.
