  1. Shallots are fairly mild as you said. You can also add a little sugar, that helps.
  2. Leeks are good,celery, fennel.Have you tried red onions much litter and sweeter.
  3. It's such a shame we eat often at the ferry house always good,haven't been to rockland broad for a few years. May give it a try this season(depending)what's left.Indeed Reedham ferry very good,Waters edge again a few years since we stopped there,good food.
  4. Last time we went to cantley wasn't very impressed with the pub they turned the restaurant into a games room and food just about okay.
  5. Okay my recipe for cornish style pasties.Enough for two. 6oz plain flour, 3oz trex or Lard pinch salt. Gently rub in fat into flour until looks like crumble, add cold water slowly until combined but not wet or too dry.I use a folk.Wrap bowel leave in fridge until ready to use. You want about 10oz of good braising steak pre diced or cut yourself about the size of your thumbnail. One medium onion diced one large carrot one stick celery medium sized potato.Diced same size.This is the bit the Cornish would shout at me.fry off the meat nice brown colour, add veg and potatoes one pint good beef stock,cookfor about two hours,season salt and pepper, thicken with flour and water,or use bisto which is fine.Add some mixed herbs fresh if poss. Cook the beef and veg day before Divide pastry in two roll out as round as possible, about the height of your small finger nail.Egg wash edges of pastry, again half the mix in each round, found the pastry, crimp edges or press down with a fork,allow to rest in the fridge for at least half an hour set the oven about 180c.Place pasties on a nonstick baking tray or sheet or parchment paper. Egg wash,cook for about 30,40 minutes. Can also do with lamb ,cheese and red onions.. Alan I know your not a fan of onions just add another root veg. Not strictly Cornish but very nice.

  8. Alan not bad for a London boy.Mind you when I did event catering I must of made about 10 ,12 thousands mini yorkies every year and I was there for almost six years.
  9. Yes seemed your correct, lots of flour but no bags to put it in.Marina got some from our local Polich shop.And very good flour it is.Then re bagged in Morrisons. Think local shops have stepped up,and I always shop local if possible. Often they will order something for you if possible. I would love to see a return of good butcher and fishmonger shops on the high street. Often use them on the broads. Theres no doubt shopping habits are changing, and perhaps may help local shops,I welcome that very much.
  10. It is strange how shopping patterns have changed. In the beginning panic took hold. Shortage of loo rolls and pasta then tomato puree, followed by flour.Suppermarkets are very good at restocking. They know each day what sells the quickest and often can reorder overnight. In normal times if for example you have a morrisons in your area, some foods will be available but may not be so in the next town.My morrisons has lots of Asian foods,due to a fairly large Asian community. They will always stock up on bbq items due to weather. During this pandemic has turned shopping on its head. One last thing Lunch for use yesterday:grilled pork fillet,braised red cabbage,cauliflower cheese,carrots roast spuds,gravy and some of these yorkies,Strawberries cream and ice cream,some home grown.
  11. Think they may have got on top of the flour shortage now.I mainly use flour for pastry and cakes.
  12. My take on Spanish style chicken.Good at home or on the boat.This is for two people. One finely diced onion,white or red,which is s bit sweeter. One sliced red or green pepper,about six button or chestnut mushrooms. Two chicken fillets.One tin of chopped tomatoes, two cloves of garlic,one litre chicken stock ground black pepper,sea salt.Spanish fine pasta,Fideu allat n0 1,available on line or fine pasta.one hand full .Smoked paprika Lightly cook the onions add peppers then mushrooms. Add salt and pepper. Then chopped tomatoes bring back to the boil,reduce heat cook for 2/3 minutes. Then add chicken stock.About 10 minutes Add a few teaspoons of paprika, before it's ready add the pasta. Chicken slice into two from the thick end to the thin end.Hot fry pan add a little light olive oil,once hot cook chicken about 3 or 4 minutes on each side lightly season,also check seasoning of the sauce.let the chicken rest for two minutes. Plate up ,pasta dish is good or a plate, add a little extra virgin olive oil,two pieces of chicken.You can add grated orange on top. Serve with salad and some nice crusty bread. Can also be done with fish or vegan using aubergine and courgettes just replace with veg stock. Tip :Olive oils. -Light olive oil good for cooking ,will be fine at high temperature. Please please dont use Extra Virgin olive oil.As I said just a little once your dish is ready to serve,great on salads.If you cook with it no good at high temperatures and it's far more expensive than basic olive oils. Some TV chefs say cook with extra Virgin olive oil. Dont there taking rubbish. My dish will also make a good soup just cut the chicken, fish or aubergines and courgettes smaller. Give it a try.
  13. I'm surprised ,despite being so careful I got a chest infection. Having COPD, makes me more prone to infections.Something I've learnt to life with.Not sure where we will go,anywhere will be good. Happy boating.

Marina and I are hoping to be up on the boat mid July.A few hurdles to overcome first.I'm on ANTIBIOTICS for another ten days,due to my chest infection .Two days ago I got a update from the NHS regarding sheilding.The bottom line theres not much I will be allowed in there advice from now from July 6. According to the advice I can form a support bubble of six people from other households outside.I still cant go to shops.Since 23 March 2020,I've stuck to the guildlines.The NHS/Government have informed me sheilding will end from 1 August,and I can return to work providing my employers prove its covad safe.We have spoken about us getting to the boat,so decided to go for it.In all honesty we can reduce risks to myself, its just us in the car and boat.I will mainly do cooking on board.Very much looking forward to it.Sheilding has been far from easy.I do feel for those in flats many of which have only just started to leave the house for once a day. I will some how carry on doing my walk in aid of the British lung foundation,not sure how but well do it.
  15. As have been mentioned there are a few organised event,but the Broads Authority advice against it.My opinion is dont do it,I think it's not a good idea with lots of boats around.
  16. Sam I've not forgotten you,I spoke with the British lung foundation awaiting a email from them.Will chase it up tomorrow. Even though I'm recovering from a chest infection, I will start my walk on Wednesday. Hoping to walk 3k a day.Also just now,I started the ball rolling and sponsored myself,hope I'm not the only one.Please if you can sponsor me too.I know only to well how nasty lung problems are no fun.The more I can raise will benefit those like myself. It's a strange new world for all of us.Think it will be busy but who knows.think the south will.be quieter then the north.As I said Silverline are very good,you will get a good welcome everywhere. Near by great pub the Ferry house phone ahead for moorings and a meal.Loddon and Chedgrave great place to stop,try the Whitehorse at Chedgrave another great pub.Oulton broad and Beccles well worth a visit. People mostly are very helpful.

Peter I remember we had Silver Melody from Brundall before we owned.We took the boat up to Waxham(interesting) very tight in the distance was a couple sat on a bench watching thought they were dead mind.Then I thought this is getting silly. A 25 point turn went back the other way.Always fun watching at Wroxham.
  23. Just remember I've been at home for three months at high risk with COPD. So simple If I get it the chances of dieing are very high.Thankfully the Ambulance crew said it was more then likely a chest infection. Which in its self is far from pleasant. I will only take acceptable risks.
