Gracie, Salt of the earth comes from the Bible Matthew 5:13 Ye are the salt of the earth: but if the salt have lost his savour, wherewith shall it be salted? it is thenceforth good for nothing, but to be cast out, and to be trodden under foot of men. Salt was spread on the land of criminals and social outcasts to poison it during the middle ages. The titled and gentry were said to be 'above the salt'. The saying 'salt of the earth' should be coupled with 'and the savour' to indicate a good person. First used by Chaucer in the Milliner's Tale around the late 1300's.
